ST. ELMO, Ill. (AP) — A food manufacturer says it plans to double its workforce in the south-central Illinois town of St. Elmo. New Jersey-based Pinnacle Foods Inc. has completed a $50 million expansion at its plant in the Fayette County town. On Wednesday company officials announced they were adding 90 jobs at the facility. That’s more than twice the current 85 employees. The plant manufactures salad dressings, syrups and barbecue sauces. Pinnacle broke ground on the expansion project in April 2014. The company received an incentives package from the Illinois Department of Commerce and Economic Opportunity that included tax credits and grant money. St. Elmo Mayor Ernie Meyers says “any time you can add 90 jobs in a community like St. Elmo and all of the little towns in between, it’s huge.”
